Peanut butter is not only rich in vegetable protein, but also rich in vitamins, niacin, vitamin E and minerals, etc., rich in nutrition and unique flavor. Peanut butter is widely used in flour products, hot pot dip and other fields, but peanut butter has a high fat content, which is not suitable for high blood pressure, diabetes and other patients to eat, it is also easy to produce oil in storage, easy oxidation, rackness, and the non-fat part of peanut butter in the storage process naturally settles to form a hard solid substance. Thus, the flavor quality of peanut butter is reduced and the storage period is shortened. The research of new peanut butter aims at the defects of flavor, nutrition and stability. At present, a series of new peanut butter with low fat, high protein, unique flavor, high nutrition and good stability has been developed. 
In China, peanut butter is widely used as a condiment for pasta, steamed bread, hot pot, stir-fry, etc., and is also used as a filling for sweet cakes, steamed buns, bread, etc. Peanut butter has been exported from China since 1988. The main product of peanut butter is full-fat peanut butter, but there are few researches on low-fat or nonfat peanut butter and nutrient-flavored peanut butter. Peanut butter in our country has a good development momentum, more than 10 production lines, mainly concentrated in Shandong, Jiangsu, Anhui and other peanut producing areas, peanut butter sales are mainly exported. By the food and agriculture organization of the United nations, In 2011, the total import and export volume of peanut butter in China increased from 2887t and 132t in 2010 to 6607t and 1256t respectively, and the export volume accounted for about 65% of the annual output.
Peanut butter is mainly used to make lunch fast food for primary and secondary school students, and is also widely used as an ingredient in crackers, sandwiches, peanut cookies, baked goods, candy, breakfast cereals and ice cream and other foods. At present, the largest commercialization of peanut butter in the world is the United States, where the annual consumption of peanut kernels is about 800 thousand tons, of which peanut butter is about 450 thousand tons, and runnertype peanuts are the main raw material of peanut butter in the United States. Canada consumes about 150 thousand tons of peanut kernels annually, of which peanut butter and other ingredients account for about 15%. Mexico's current annual consumption of peanut kernels is about 70 thousand tons, of which peanut butter (imported) accounts for 10%. Northwest European countries such as the United Kingdom, the Netherlands and Germany consume about 500 thousand tons of peanut kernel materials annually, and peanut butter accounts for about 15%. In recent years, Japan consumes 110 to 120 thousand tons of peanut kernels every year, and about 5% of peanut butter is used. South Korea consumes about 40 to 50 thousand tons of peanut kernels every year, and peanut butter accounts for about 5%. In summary, peanut butter is widely eaten at home and abroad, and its production and sales are huge.
