
Fava beans (Vicia faba), also known as broad beans, are one of the oldest cultivated legumes in the world. With a history spanning over 2,000 years in China, they remain a beloved seasonal delicacy. China is currently the world's largest producer and consumer of fava beans, with major growing regions in Yunnan, Sichuan, Hubei, and Jiangsu provinces. From late spring to early summer, fresh green pods flood markets, signaling the arrival of this cherished ingredient.
Fava beans are exceptionally nutritious. Every 100 grams of fresh young beans provides approximately 8.8 g of protein, 19.5 g of carbohydrates, and rich amounts of B vitamins, potassium, calcium, phosphorus, and iron. Dried mature beans contain 25–35% protein with a well-balanced amino acid profile, especially high in lysine, earning them the nickname "vegetable meat." In Traditional Chinese Medicine, fava beans are considered neutral and sweet in nature, believed to strengthen the spleen and stomach, promote diuresis, reduce swelling, clear heat, and detoxify the body.
